Sure, I'll share. I almost never eat meat at breakfast, and possibly about half of my lunches are meat-free as well. I certainly don't find the need to eat meat at every meal.

I do eat meat for dinner most nights, but we buy local meats from a local butcher shop where everything is high quality. Much of it is also organic and grass-fed.

I'm with you and agree that some people can probably pull off a veg diet. I just wasn't one of them, and I've known others who weren't able to keep it up, either. But I'm glad that it does work for you.
